Rae's Dirty Rice

Ingredients
1 lb. hamburger
1 16 oz. can of black eyed peas (drained) or 2 cups cooked black-eyed peas
1 4 oz. can chopped green chilis
1 clove of minced garlic
1 medium onion, chopped
1 large tomato, chopped
1/2 tsp. cumin
1/2 tsp. chipotle chili powder
1/2 tsp. ancho chili powder
1/4 tsp. cayenne pepper
1/4 tsp. liquid smoke
1 tsp. of hot salsa or a finely chopped jalapeno
salt and pepper to taste
2 cups of chicken or vegetable stock
1 cup of rice

Directions

Brown hamburger, add onion and garlic. Cook until onions are translucent. Add green chilis, beans, tomatoes and salsa. Let simmer for 10 to 15 minutes. Add remaining spices and continue to simmer.
Prepare rice according to package directions using the chicken or vegetable stock instead of water. When rice is ready, mix into the meat and bean mixture. Serve with corn bread or hush puppies. Yum!
