Oyster Stew

Ingredients

1 1/2 cups water
1/2 cup yellow onion, peeled and minced
2 cups potatoes, diced
1 tsp. salt
1/2 tsp. white pepper
1/4 tsp. smoked paprika
1 tsp. Tuscan herbs
1 can (14 ounces coconut milk or cream) - we used coconut milk
2 Tbsp. butter
1 can (8 ounces) oysters
cayenne pepper to taste

Directions


In a medium saucepan, heat water, onion, potatoes, salt and pepper to boiling. Reduce heat and simmer for about 20 minutes or until potatoes are tender. Add coconut milk. In separate pan, saute oysters (in their own juice) with the butter and a dash of salt for 2-3 minutes until heated through. Add to stew and heat for an additional 2-3 minutes. Serve and enjoy!!
