Beets with brandy onions and feta

Ingredients

2 cups sliced peeled and cooked beets (not pickled) [I used fresh peeled and steamed beets.]
½ medium onion - sliced thin
1 T butter
1 T olive oil
¼ cup crumbled Feta cheese
3 T Brandy

Directions

In small saute pan, over medium heat, cook onions in butter and olive oil until they start to caramelize. Add Brandy. Continue to cook until browned. Add salt and pepper to tase.

Place sliced beets on aluminum foil. Add onions on top and then the Feta cheese. Close the aluminum foil and cook in 350 degree oven for 15 minutes. Open foil and place under broiler until cheese browns a bit. (About 2 minutes)

We had these beets with Le Lapin Paso Robles Multiplicity Red Wine. OMG!! The beets were made as a side dish to a stir fry but we could have easily made an entire meal out of just the beets. YUM!! Make a double batch and enjoy!
