Breakfast Pies

Ingredients

6 small pie tins (pot pie size)
2 pre-made pie crusts (Or make your own pie dough)
8 strips of bacon (cooked crisp and crumbled)
6 eggs
Grated cheddar cheese (about a cup)

Directions

Roll out dough and place a tin top down on the pie dough. Cut about 1/2” around the outside of the tin. Do for all 6 tins. Put dough in each tin and shape the edges. Place the tins on a cookie sheet and bake in a 350° oven until crusts are light brown.

Remove the pie crusts from the oven and add crumbled bacon and grated cheddar. Crack an egg over the top of each pie, salt and pepper to taste. Cover with foil and bake at 350° for about 20 minutes or until eggs are desired consistency. Enjoy with a glass of Hot to Trot Red Blend. Cheers!

We served the breakfast pies with Biscuits and Gravy.
